Chocolate chip Muffins

Tipica ricetta americana/inglese, i muffin sono diventati oramai famosi in tutto il mondo. Li ho mangiati per la prima volta negli USA. E’ stata zia Elsa ad insegnarmi a preparare i muffin, mi ricordo che li facevamo molto piccolini…erano deliziosi!

Il 30 Aprile è stato il compleanno di mio marito. Vista la sua passione per i muffin ho deciso di non preparare la solita torta di compleanno, ma di spegnere le candeline con dei gustosi muffin.

Questo è un periodo molto impegnativo per me e mi scuso se ci ho messo un pò di tempo per postare la ricetta. Devo cercare di inserire nella mia agenda anche del tempo per me stessa, se non faccio così lavoro tutto il giorno senza mai fermarmi. Cucinare è per me un modo per rilassarmi,  quando decido di farlo mi sento felice come una pasqua!

Premetto che questa ricetta non l’avevo mai sperimentata e sinceramente preferisco di più la ricetta dei miei classici American Muffin. Inoltre ho sostituito le noci con del cocco.

Muffins are a tipical american recipe and nowadays they are famous all over the world. I will never forget the first time I have had a muffin in the USA. My American Aunt Elsa tought me to make them. We used to prepare very little muffins…they were delicious!

It was my husband’s 32nd Birthday on April 30th. Since he loves muffins, I decided not to cook the classic birthday cake. He blew out the candles on his tasty muffins.

During this period I’m very busy and I am sorry if it took me so much time to post this recipe. I need to include some hours of rest in my agenda, otherwise I never stop working. Cooking is my way to relax, it makes me feel very happy!

I had never tried out this recipe, and sincerely the result was not excellent. To be honest with you, I prefer my classic American muffins recipe. Besides I used coconut instead of walnuts.

Prep: 10 min

Bake 20 min

Ingredients for 12 muffins

  • 3/4 cup milk
  • 1/4 cup butter or stick margarine, melted
  • 2 eggs
  • 1 3/4 cup all purpose flour
  • 1/2 cup miniature semisweet chocolate chips
  • 1/2 cup chopped walnuts or pecans
  • 1/3 cup packed brown sugar
  • 2 1/2 teaspoons baking powder
  • 1 teasponn salt

INSTRUCTIONS:

Heat oven to 400°. Grease bottoms only of 12 muffin cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups.

Beat milk, butter and eggs in a large bowl with fork or wire whisk. Stir in remaining ingredients just until flour is moistoned. Divide batter evenly among muffin cups (about 2/3 full).

Bake 20 minutes or until golden brown. If baked in greased pan, let stand about 5 minutes in pan, then remove from pan to wire rack; if baked in paper baking cups, immediately remove from pan to wire rack. Serve warm if desired.
